Over time, CO₂ builds naturally, creating a pressurized environment that changes the internal structure of the cherries.

Unlike typical anaerobic methods, this process can last up to 10 days, allowing extended contact between the fruit and bean. During this time, the cherries transform from red to golden yellow before being slow-dried on raised beds for 20–25 days.
