Ethiopia Wubanchi Supernatural is a specialty coffee from the Guji zone in Oromia, Ethiopia, specifically from the Wubanchi washing station in the village of Mesina. This coffee is processed using the “Supernatural” method, an advanced natural (dry) processing technique that enhances traditional sun-drying by creating controlled aerobic fermentation during the drying phase. This involves drying the coffee cherries in multiple layers on raised African beds or inside semi-permeable boxes that limit sunlight but allow airflow, prolonging drying time and encouraging complex fermentation of sugars in the cherries.
Key characteristics:
•Region: Guji, Oromia, Ethiopia
•Altitude: Approximately 1668 to 1980+ meters above sea level
•Varietals: Ethiopian heirloom varieties (74110, 74112, 74165)
•Processing: Supernatural — cherries dried on raised beds for 22-25 days with controlled fermentation
•Flavor notes: Floral, Berries, Pear, Grape Juice
Processing details:
•The supernatural process uses thicker layers of cherries than traditional natural processing.
•The cherries are exposed to oxygen but covered to maintain heat and moisture.
•This method prolongs fermentation, enhancing flavor complexity and sweetness.
•Moisture, temperature, and sugar content are carefully monitored to avoid over-fermentation or mold.
Brewing recommendations:
•Suitable for pour-over, filter brew, cold brew, and French press methods.
•Fresh roasted beans are recommended to rest 8-10 days post-roast for optimal flavor development.
This coffee is highly regarded for its unique and vibrant flavor profile, representing the rich coffee heritage of Ethiopia’s Guji region with an artisanal approach to processing that elevates the natural sweetness and complexity of the beans
