Day 1 — Roasting Fundamentals + Practical Training (5 hours)
  • Green coffee basics: varieties, processing & moisture levels
  • Roast stages: Drying → Maillard → Development
  • Heat transfer and roast curve introduction
  • Understanding temperature, airflow & development time
  • Hands-on rotating session (small batch practice)
  • Roast profile logging & comparison
Day 2 — Cupping & Flavor Evaluation (2.5 hours)
  • Introduction to SCA cupping protocol
  • Guided cupping session using roasted samples
  • Understanding acidity, sweetness, and body
  • Spotting roast defects (underdeveloped, baked, scorched)
  • Sensory discussion & flavor note training
