Course Outline
Day 1 — Roasting Fundamentals + Practical Training (5 hours)
- Green coffee basics: varieties, processing & moisture levels
- Roast stages: Drying → Maillard → Development
- Heat transfer and roast curve introduction
- Understanding temperature, airflow & development time
- Hands-on rotating session (small batch practice)
- Roast profile logging & comparison
Day 2 — Cupping & Flavor Evaluation (2.5 hours)
- Introduction to SCA cupping protocol
- Guided cupping session using roasted samples
- Understanding acidity, sweetness, and body
- Spotting roast defects (underdeveloped, baked, scorched)
- Sensory discussion & flavor note training
