Meet Colombia Caldas El Renacer: A Juicy Specialty Coffee with a Watermelon Twist

When it comes to specialty coffee, every coffee tells a story — where it comes from, how it is processed, and the choices made along the way that shape what we taste in the cup.

Our latest selection takes us to Caldas, Colombia, where we found a coffee that brings something a little different to the table: Colombia Caldas El Renacer, a medium-roasted specialty coffee processed using a unique watermelon co-fermentation method.

If you enjoy coffees that are juicy, expressive and full of character, this is one worth exploring.

From Caldas, Colombia

Located in Colombia’s famous coffee-growing region, Caldas is known for its mountainous landscape, high elevations and favourable conditions for growing specialty coffee.

Our Colombia Caldas El Renacer was grown at an altitude of approximately 1,700 metres above sea level, using the Typica Mejorado variety.

At this elevation, coffee cherries develop slowly, allowing the beans to build complexity and sweetness before they are harvested and processed.

What Makes This Coffee Different?

The first thing that makes El Renacer stand out is its processing method.

This coffee undergoes a watermelon co-fermented process, creating an expressive cup profile that is quite different from a more traditional washed or natural coffee.

Co-fermentation is a process where coffee cherries are fermented alongside another ingredient or flavour source under controlled conditions. In this case, watermelon plays a role in the fermentation process, contributing to the coffee’s distinctive tropical character.

The result?

A coffee that is vibrant, juicy and playful, with flavors that can remind you of a warm summer day.

What Can You Expect in the Cup?

Our tasting notes for this coffee are:

Cantaloupe · Watermelon · Chocolate · Juicy

The watermelon character gives the coffee its most distinctive personality, while cantaloupe brings a soft tropical sweetness.

As the cup develops, chocolate notes help balance the fruitiness, giving the coffee a more rounded and satisfying finish.

Rather than being simply “fruity”, this is a coffee with layers — juicy at first, sweet and chocolatey as you continue drinking.

A Coffee for the Curious

Colombia Caldas El Renacer is particularly suited to coffee drinkers who enjoy exploring coffees beyond traditional flavour profiles.

If your usual cup is comfortable and familiar, this is an opportunity to try something more expressive.

It’s the kind of coffee that invites you to slow down, take another sip and ask:

“What am I tasting now?”

How We Roast It

At Lighthouse Coffee, we roast El Renacer to a medium roast.

The aim is to preserve the coffee’s natural character while developing enough sweetness and body to complement its distinctive fermentation profile.

As a 100% Arabica specialty coffee, it is suitable for a range of brewing methods, particularly when brewed as a filter coffee where its fruit-forward character can shine.

We recommend trying it with:

  • V60
  • Pour Over
  • Other filter brewing methods

For the clearest expression of its fruit and sweetness, try it black before adding milk or sugar.

The Lighthouse Coffee Perspective

Specialty coffee isn’t only about finding a “good” cup of coffee.

It’s about discovering how origin, variety, altitude, processing and roasting can create completely different experiences from one coffee to another.

Colombia Caldas El Renacer is a great example of that.

One coffee bean.
One origin.
One unique process.
A completely different experience in the cup.

If you’re ready to explore something juicy, tropical and a little unexpected, El Renacer is a coffee worth getting to know.
